Food Philosophy
Haberdish is a mill-town Southern kitchen, and we’re downright obsessed with doing things the way Southerners have for generations—slowly, carefully, and always from scratch. We start with whole, fresh ingredients and build flavor the honest way. Our seasonal pies and hand pies rest on flaky, homemade crusts; our smoker stays busy giving our chicken, rib racks, and even the whites of our deviled eggs that deep, smoky flavor. We even roll and cut our own tater tots because the frozen stuff just won’t do! Enjoy farm-fresh eggs from Harmony Ridge—from pasture-raised chickens (with no artificial feed or hormones)—on our sandwiches and brunch biscuits. And when it comes to sauces, if it isn’t ketchup, we make it in-house—same with our bright, punchy pickles and our hot, buttery biscuits. This is Southern cooking with grit, pride, and a whole lot of love.
We want to give a big shout out to the local farms that bring us fresh produce including: Fair Share Farms, Urban Gourmet, Second Hill Farms, Small City, Boy & Girl, Barbee Farms, Lucky Leaf Gardens, Bush n’ Vine Farm, Franklin Citrus, Street Fare, Tide Water, and more!

Mountain River Farms – Andrews, NC
Grown in the clean, pure waters of the western North Carolinas, we serve up Mountain River Farms rainbow trout. Much of the river water comes from forest service land and national parks ensuring the highest quality rainbow trout.
SNOWFLAKE FLOUR
Sanford Milling Company – Henderson, NC
Snowflake flour comes from Sanford Milling Company in Henderson, NC – a fourth generation, family-run flour mill. Snowflake flour is an enriched, short-patent flour which means it is finer, softer, and whiter than other flours – and makes for our delicious homemade biscuits, pastries and cakes right here at Haberdish!
GRITS, CORN FLOUR, & CORNMEAL
Anson Mills – Columbia, South Carolina
Our Anson Mills coarse grits are produced from field ripened Carolina Gourdseed White or John Haulk Yellow dent mill corn, each prized historically for exceptional flavor and texture—and each, until recently, nearly extinct. At Anson Mills, no amendments or processing aids touch the stream of their goods from farm to table. Though they maintain organic certification, they strive principally for on-farm sustainability. On-farm sustainability means that they bring only seed onto their farms and use natural crop rotations to build the soil without amendments. Enjoy!
There’s cool stuff all around you.
Our soap stone bar top came from a quarry in Virginia. We have selvedge denim on our interior seating that was produced in Cone Mills, North Carolina. Our table tops were hand crafted right here in Charlotte, and the wood came from the rafters of our building. The bar taps are reused spindles from a former mill, and our copper lights are hand-spun and designed and assembled right here in Charlotte.
We’re lucky to have two sculptures and an in-laid tile piece all created by Paul Sires – who we call “the godfather of NoDa”. Paul and his wife, artist Ruth Ava Lyons, helped this community transition from the closing of mills to the hip, artistic center it has become. See more at www.noda.org.
